ON a whim, I bought one of those gallon sized organic apple juice at the store.  In the big clear jug.   I know at the AHA conference I saw a seminar on doing a 1 gallon batch.  But I can't remember that, it was almost 2 years ago.

All I have is distillers yeast.

Will I end up making nasty jungle juice with that yeast?

Typically Distiller yeast is yeast & nutrient.  It's main purpose is to create alcohol.  I would think it would strip the juice of any profile.  IIRC, the dude at Philly used some ale yeasts with the store juice.

That's what I was thinking.  He may have mentioned a champagne yeast and a belgian yeast.    Maybe i'll just sit on my thumbs until I get my next batch of yeast for a batch of beer.

if it isn't pasteurized, or preserved, you don't need any yeast, it'll just take off on it's own from sitting at room temp
