Hot and sour soup

I honestly hope that Sioux makes it better, this is what I got

1 small Vidalia onion, chopped fine.
2 medium carrots, julienned.
Either 4 dried red chiles or 1 heaping TSP dried.
Fist full of shitake shrooms.
Fist full of straw mushrooms.
One tray of firm tofu.
12 cups water + bullion
1/3 cup of cornstarch, to thicken.
2 eggs, whipped.

2 chix thighs, slice thin
3/4lb shrimp

1/2 cup, and could be 2/3 cup of rice vinegar.
1/4 cup soy sauce.
1 tsp of sesame oil.

In a wok or Dutch oven, saute the onions and carrots. Toss the mushrooms in at the end, 2 more minutes.

In a separate pan, brown the chicken as a you cut it in thin strips.

Add 12cups water or broth. I use better than bullion Lobster. And 3 tsp Lobster stock.

Add tofu, soy, vinegar and bring it to just below boiling. Turn off.

Whip the eggs in a bowl, and drizzle in.

Here is the oil schedule. You saute all the shit in peanut oil. The sesame oil, you add with the egg directly into the soup, right at the end.
