We found this resort while vacationing in St. Lucia for our 10th anniversary. Went to the beachside bar to grab a bit after snorkeling the morning away.

They had octopus tostadas on the menu that sounded fantastic.

They were so good we went back twice just to have them. Along with getting some snorkeling time.

On a whim I emailed them saying what a great time we had and wondering if they would share the recipe.

To my surprise they did!

So props to Sugar Beach St. Lucia for great customer service. If you're ever in the area stop by.


Octopus Tostada

6 Servings

Ingredients:

1 kg Octopus

50g Mayonnaise

1 Chopped Coriander Bunch

2 pc Red Onion

½ tbs Chipotle Pepper

4 tbs Tomato Sauce

2 tbs Eel Sauce

20g Sour Cream





Method

1. Blanch the octopus slowly for three hours.
2. Slice the octopus.
3. Cook the diced red onion in oil, add tomato sauce, chipotle pepper, and cook for five minutes.
4. Add the octopus, the coriander, and the mayonnaise.
5. Continue to cook slowly for three minutes, and add the eel sauce and the sour cream.
6. Salt and pepper to taste.

Weird.  I expected tostadas to be crunchier.  :P

 

I'd try that, but no idea where to get good octopus around here.  Tennessee is a good 10 hour drive.
