Just did one yesterday with a few chunks of Hickory, good Bob, so good.
Basic bitch rub too.
Paprika / salt /pepper /.5 cup of brown sugar
Smoked it @275 for 4ish hours for 2-#3 birds. Pulled the skin off, pulled the chicken and used a local BBQ sauce.
Pan fried chicken skins til they were mega crispy.
Plain ol potato burger bun topped with a vinegar based slaw and crispy chicken skin pieces
