Today's previous plans got cancelled so I got in a unexpected brewday. Got up early and made a shaken not stirred starter of 1450. Wanted something new to me so a come up with a new porter recipe. During the brew I had to keg the beer that was in the fermenter and clean a bunch of stuff, also smoked some salmon. Got everything done now and cleaned up. Beer is in the fermenter finishing up the chill process while waiting on the yeast to hit high krausen. Will pitch in a couple hours or so. Anyway here is the recipe.

1# of roast in 12g does not seem bad to me.

naw.  it will be good I think.

I still don't know if I have a good understanding of pale chocolate though.  I've used it before a few times.

I view it as a different layer of flavor than regular chocolate malt. It's less roasty but still has some chocolate flavor. Like the difference between milk chocolate and dark chocolate. What have you thought of it?

I just don't have a good impression yet of how roasty it is vs how toasty it is.  it kind of seems like a combo of the two but I could be wrong.

Pale chocolate is, to me, toasty chocolate and hints of coffee. Much less roast and no char/burned flavor. Also should specify Im talking about Fawcett's Pale chocolate.

I had a OG of 1.064. Considering the grain bill what would you guys expect for a FG?

Ok, well I'm at 1.022 now. I thought it would be farther along after a week. I will give it a few more days and check again. Didn't really taste overly sweet though. Not as roasty as I thought either. Nice chocolate flavor as of now.

Currently down to 1.020. It's been a LONG time since I used 1450. I think i remember it being a slow mover.

Matt, this might be a good candidate beer for serving on nitro.
