Feck my beer life...

My friend is in Germany at the tegernsee brewery. It's a local brewery south of munich. Best helles I've ever had. I'm in Tallahassee watching over my mom's recovery.

Been there. I had friends in Munich while I was helping my dad with knee replacement surgery. I lived at my parents house for a week and then went back to take them shopping and take both of them to doctor appointments and physical therapy sessions. But there is plenty of time for beer drinking after you take care of your mom. You're a good son. :D

Yeah, I know, but it will be years before I'll get to make the pilgrimage to Germany for fresh beer.

I've been waiting myself. I have a bud whose wife is German and she still has family there. They used to go every year but then had kids who are now 6 and 8. They will not go for awhile but when they do... I'm going with them and MMM, BOY. :D

Schwanz, continued vibes for your mom, and to echo Ken's earlier statement, you're a good dude for standing by with her when she needs the help.

Any chance your buddy could pickup some of this helles you like so much and bring it back or have it shipped to you?

Also... do tell on the helles. What's so good about it? I know that's hard to describe and since a helles is SUCH a simple style, I find that the yeast could be one of the largest contributors to the flavor profile. A helles with S189, 2124 or the Augustiner yeast would all be very different.

First I'll give an emotional account... my friend goes to Germany 2 to 3 times a year. His gf lives in Germany. She lives near munich and close enough to tegernsee. When he goes to germany she buys 2 crates of their helles for him. He brought some home with him for me to try. He always brings back beer and is the sole reason I've tried many true kolsch and altbiers. Well he brought home 6 bottles from a fresh crate the first time. I'm a beer judge and I've been exposed to tons of beers, I appreciate him bringing back beer, but none had ever truly made me impressed beyond this is just great beer, none had "it", that wow factor. Well this beer truly knocked me for a loop and made me rethink my entire brewing philosophy. I had one of those "woah" moments when I tried it. Everything was spot on, I mean perfect. I mean this is the beer from the beerfest movie that makes the old guys lip quiver. Mouthfeel aroma flavor everything was just perfect. The balance was perfect, it felt like I was drinking divinity. Only a few times have I ever had that reaction to a beer.

From a more objective perspective I think the mouthfeel was the biggest factor, it was balanced perfectly with carbonation and the viscosity was perfect. Next I'd say that the flavor was perfectly balanced. Each malt flavor could be picked out, but none overwhelmed, the light hoppiness was balanced and refreshing, the balance was just perfect. No off flavors no sulfur no heat from alcohol no oxidation. It was the perfect beer.

My buddy likes to go there in the summer and hike to the brewery up the mountain and through the woods. Apparently its beautiful. I really want to experience it first hand very badly.

I will say that I had some of that beer that was older and it was just ok.

I hate to say it but your description of that beer sounds a lot like what the Low-O2ers describe. In all of the low-O2 talk, I don't remember seeing your opinion on it. I also know you brew differently than the rest of us (are you still making 5 gallon batches at home or have you quit that now?) so maybe your large-scale system already has a lot of low-O2 design built into it. Do you subscribe to the low-O2 thing or no?

I'm could see there is something to it - now if their methods actually achieve it in a way that is detectable I don't know.

I use brewtan now but my sample size is 1 so far pretty damn good beer. I've always been gentle to my wort whenever possible, but the low o2 process guys are nucking futz. I'm still only brewing 1bbl at a time and bot often enough. I'd like to build a shed out back and brew smaller batches too though, just no time right now.

And the O2 argument isn't necessarily the right one on why that beer is so good. We have no idea how they brew it and ultimately the ingredients make a big difference too. I've not had a ton of fresh German beers but most I have had haven't had that same level of quality, so who is to say what exactly made that beer special.

All I know is that I want to go to Germany on a beer drinking tour very badly.
