standard mead is around 12 lbs of honey to 5 gallons of water and two packets of Lalvin EC-1118 or similar. i've used both liquid yeast and dry yeast for mead and i really can't tell any difference. i'd keep track of the gravity. a lot of times, as in my experience, mead will tend to "dry out"as it approaches 1.00. some like dry meads while others do not. you can terminate fermentation and if it's too dry you can always add back in a little honey to taste. i prefer something between a sweet mead and a dry mead. i always keg my meads...so i can't help you in the bottling phase tho it's pretty much the same as for beer.some like fruits in their meads. i have never been one to add fruit to anything. if i want a particular fruit taste i've always used extracts.

I started with a plain show mead. Honey, water, nutrient, and yeast. I think it may be exactly Hightest's recipe, but I don't have my notebook at work. It turned out very nice (with a 2-year age, coming up on 3 years now).
